The stunning Hobson’s Restaurant at Waterford’s Tower Hotel, overlooking the River Suir and the apex of the city’s Viking Triangle, is now open for business and represents a stunning addition to Waterford’s dining circuit. Featuring floor to ceiling windows, replicating many of the design features of the Pier 37 on the floor below, it, this stunning, bright and airy dining space makes for a spectacular first impression. “We’re now open for breakfast, lunch, afternoon tea and dinner,” said Sinead Corcoran, Sales & Marketing Manager with the Tower Hotel, during a stroll around this stunning city centre addition, “and our Christmas menu will run throughout December”.
Ms Corcoran added: “The opening of Hobson’s Restaurant (which seats 150 diners) is part of the redevelopment of the Tower Hotel, the sum total of which will upgrade us to 4 star, which we’re all very excited about. With Pier 37 and Hobson’s Restaurant now completed, the transformation of the hotel is well underway. Come the New Year, all of the bedrooms will be upgraded, as well the lobby and reception area, with our new Conference Centre (which will accommodate between 600 and 650) to follow beyond those works, but I have to say, we’re really proud of Hobson’s Restaurant.”

And that pride is well placed. The riverside views are stunning, and are particularly eye-catching at night as the city’s north bank illuminates. The sense of space at Hobson’s is equally eye-catching and has already won praise from guests and diners alike. “There’s been fantastic interest from the public already,” said Sinead. “You can come into the bar for a drink, then come up here, have dinner (or the Early Bird before a Theatre Royal show, for example) and then return downstairs for entertainment on Friday and Saturday nights: it makes it an easy night out, all under one roof!” Hobson’s Restaurant serves locally sourced, seasonal cuisine. Its extensive wine list includes everything from new world treats, Italian Prosecco, delicious reds and perfectly chilled whites, champagne to dessert wines.

“In addition to our varied and enticing menu, the views from Hobson’s have really been maximised and the end result is fabulous,” Sinead added.

“Liz Harte (from New Ross) designed both the restaurant and the bar and she’s done a terrific job, while Tom Walsh of mirrors.ie fitted out all of our mirrors and prints – and to see parts of the refurbishment project now fully realised is very, very satisfying. And when all of these works are completed, the Tower Hotel will be a landmark hotel in the South East.” The restaurant also features a partition facility, permitting smaller, private family functions to be held in this fantastic new hospitality space. Breakfast is served at Hobson’s Restaurant from 7am to 10am (Mondays to Fridays) and 8am to 11am (Saturdays, Sundays and Bank Holidays) Dinner is served daily from 6.30pm to 9pm (Mondays to Wednesdays), 6.30pm to 9pm (Thursday and Sunday) and 6.30pm to 9.30pm (Fridays and Saturdays). A two-course early bird/pre-theatre option is also available between 6 and 7pm nightly, Sunday Lunch is served from 12.30pm to 2.30pm and a brand-new Kid’s Menu is also worth checking out.
